  2. Chop onion and peppers into thumb-sized pieces and halve the cherry tomatoes.
  3. Place into a mixing bowl and combine with tomato purée, crushed garlic, and olive oil.
  4. Spread the mixture directly onto a Merrychef cooking tray (do not use a liner).
  5. Add chunks of feta cheese to the tray. Load the tray into the oven using the oven paddle and start the appropriate cooking profile for your Merrychef model.
  6. Once cooking is complete, remove the tray and allow to cool slightly.
  7. Transfer the roasted mixture to a blender or food processor. Add stock and blend until smooth.
  8. Season to taste, garnish, and serve warm or chill as desired.
  9. Cut the prebaked focaccia into half, spread black olive tapenade and layer with sliced mozzarella and basil. Cook for 30 secs (Fan: 20% MW: 50%).
